I made it for Easter because (1) we would be driving to my hometown so I needed something that could travel easily; (2) I'd be cooking it in my mom's kitchen so I didn't want to have to make a huge mess; and (3) when we are with my family I don't want to spend a lot of time cooking but I wanted to bring something to contribute to our first married Easter lunch! Peanut Butter Pie was the perfect solution! I just packed up the seven ingredients, I only dirtied up Mom's mixer and it took me about ten minutes... That, my friends, is a winner recipe!
I wish I had a TON of pictures to show you how pretty and delicious the final product was, but to be perfectly honest, before I had time to find my camera the pie had been scarfed up! Not a SINGLE picture of the pretty pie! Sooo, I'm borrowing this picture from Kristin of Iowa Girl Eats blog... I don't think she'll mind because I'm happy to give her ALLLL the credit! She makes a mean recipe, cooks it just perfectly and take really pretty pictures of her creations (something I could definitely work on... Sorry folks).

Doesn't that look delicious?! It's to-die-for! It is very rich, but also a nice light dessert! You also refrigerate it so it's perfect for warm sunny weather! I'm telling you, you MUST try it!
RECIPE MONDAY: PEANUT BUTTER PIE
What you need:
1 Pre-Made Oreo Crust
1 C Creamy Peanut Butter
1/2 C Sugar
8oz Cream Cheese (Softened)
2 Regular Tubs of Whipped Cream
Caramel Sauce
Hot Fudge Sauce
What you are going to do:
(1) Mix together peanut, sugar and cream cheese until thoroughly combined.
(2) Fold in one tub of Whipped Cream and spread mixture evenly in pie crust.
(3) Heat hot fudge sauce in the microwave until it is smooth and spreadable. Spread sauce evenly over peanut butter filling (use as much as you'd like but save a little for the topping). Refrigerate for ten minutes or until ready to serve.
(4) Just before serving, cover hot fudge sauce with the whipped cream (I used about half the tub). Drizzle remaining hot fudge and caramel sauce on top.

this looks yummy! i love peanut butter pie! i was first introduced to it by the pioneer woman. actually, i love anything that involves peanut butter :) my mom makes a pb cake! DELISH!
